A simple and refreshing lunch staple that I always have on hand is chicken salad. It is delicious and full of nourishing ingredients that help you feel your best.
What I love most about chicken salad is its versatility. It can be enjoyed on its own, over a bed of fresh greens, in a wrap, or layered onto your favorite sandwich bread or croissant. Personally, I love to serve it over crisp greens or paired with a slice of fresh sourdough bread.
While there are countless variations of chicken salad to choose from, this is my go-to version. It combines fresh grapes, celery, red onion, and toasted almonds for the perfect balance of texture and flavor. The grapes add a subtle sweetness, the celery and red onion bring freshness and crunch, and the toasted almonds (pecans or walnuts can be substituted) elevate the dish with a satisfying, nutty finish.
